The first thing I notice when I open this THS matcha from China is its deep green colour and clean vegetal aroma. I love whisking it when I want a tea with real character: it tastes grassy and gently bitter, with a pleasant umami depth that works beautifully both on its own and in creamy drinks.
I usually sift 2 g first, whisk it with a small amount of hot—not boiling—water, then add the rest of the water until it turns smooth and lightly foamy. I also like using it for matcha lattes, smoothies, cakes, ice cream or mochi, so the 80 g tin gives me plenty of room to play with both drinks and desserts.
For me, this is one of those pantry products that turns a normal break into a little tea ritual. I can enjoy it hot, serve it over ice, or add milk when I want something softer and creamier.
